Streusel Topped Banana Muffins
These are so good. You can use the Streusel or leave it off if you like but I will tell you with the Streusel they are sooooooooooooooo good!

Ingredients
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 ripe bananas, mashed
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 egg, lightly beaten
  • ⅓ c. butter, melted
  • 1 tsp vanilla
  • ½ tsp nutmeg
  • ¾ tsp cinnamon
  • Streusel Topping:
  • ⅓ cup packed brown sugar
  • 2 Tbsp all-purpose flour
  • ¼ tsp ground cinnamon
  • 1 Tbsp butter
Instructions
  1. Preheat oven to 375°. Line 10 muffin cups with muffin liners or lightly grease muffin pan.
  2. In a large bowl, combin 1½ cups flour, baking soda, baking powder, salt, nutmeg and the cinnamon.
  3. In another bowl, beat the bananas, sugar, egg, vanilla and melted butter.
  4. Add the banana mixture into the flour mixture. Blend just until moistened.
  5. Fill the muffin cups about ⅔ full with the mixture.
  6. In a small bowl, mix together the struesel ingrediensts ...brown sugar, flour and cinnamon
  7. Cut in the butter until the mixture is the consistency of coarse cornmeal.
  8. Sprinkle the topping over your muffins.Pat down lightly just to make sure the struesel is sticking to the muffins
  9. Bake for 18-20 minutes or until the center of muffin comes out clean when inserting a toothpick into the middle.
