Creamy Cream Cheese Mashed Potatoes

Serves: 4
  • 2 Lbs potatoes peeled and cut into large chunks
  • 1 stick butter, softened
  • 8 ounces cream cheese, softened
  • ¾ cup warmed milk
  • 1 tablespoon salt for cooking
  • 1 tablespoon salt for seasoning
  • pepper to taste
  1. Place cut potatoes in a large saucepan with cold water to cover by about 3 inches and season generously with salt. Bring to a boil over high heat. Lower the heat to maintain a gentle simmer and cook until the potatoes are fork tender, about 40 to 45 minutes.
  2. Drain the potatoes in a colander in the sink Mash potatoes using a potato masher or blend on low using an electric mixer until most of the lumps are gone and the potatoes are smooth and fluffy. Add in the softened cream cheese, butter, warm milk, salt and pepper to taste. Mix on low until all ingredients are well thoroughly blended.
