Cinnamon Roll Christmas Trees

Ingredients
  • DOUGH
  • 4-1/2 cups all-purpose flour
  • ⅓ cup sugar
  • 2 envelopes Fleischmann's® RapidRise Yeast
  • 1 teaspoon salt
  • ¾ cup milk
  • ½ cup water
  • ⅓ cup plus ¼ cup butter OR margarine
  • 2 eggs
  • CINNAMON FILLING
  • ⅔ cup sugar
  • 2 teaspoons Spice Islands® Ground Saigon Cinnamon
  • VANILLA ICING
  • 2 cups powdered sugar
  • 3 to 4 tablespoons milk
  • 1 teaspoon Spice Islands® Pure Vanilla Extract
  • Decorations such as colored icings, sprinkles or candies
Instructions
  1. Combine 1-1/2 cups flour, sugar, undissolved yeast and salt in large mixer bowl. Heat milk, water and ⅓ cup butter until very warm (120° to 130°F); butter does not need to melt. Add to flour mixture; beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs and ½ cup flour; beat 2 minutes at high speed, scraping bowl occasionally. Stir in remaining flour to make stiff batter; grease top. Cover tightly with plastic wrap; refrigerate 2 hours or up to 2 days.
  2. Remove dough from refrigerator and punch dough down. Remove dough to lightly floured surface; divide in half. Set aside 1 half. Roll remaining dough to 16x10-inch rectangle. Melt remaining ¼ cup butter; brush 2 tablespoons over dough. Sprinkle evenly with half of cinnamon filling. Beginning at long end, roll up tightly as for jelly roll; pinch seam to seal. With sharp knife, cut roll into 16 equal pieces. On lower third of large greased baking sheet, arrange 5 rolls, cut sides up, in a row with edges touching. Form tree shape with addtiional rows of rolls - 4 rolls in second row, 3 rolls in third row, 2 rolls in fourth row, and 1 for top of tree. Place remaining roll at bottom center of tree to make trunk. Repeat with remaining dough, butter and filling. Cover; let rise in warm place until doubled in size, about 30 to 45 minutes.
  3. Bake at 375°F for 15 to 20 minutes or until done, switching postions of sheets halfway through baking time for even browning. Remove from sheets; let cool on wire racks. Drizzle with Vanilla icing. Decorate "trees" with colored icings, sprinkles or candies if desired.
  4. Cinnamon Filling: Combine sugar and cinnamon in a small bowl. Stir well.
  5. Vanilla Icing: Combine powdered sugar, milk and vanilla in a small bowl. Stir until smooth.
  6. Recipe Note: These are easy to make ahead. You have two choices: you can make the dough and chill up to 2 days, then shape, let rise and bake, as described in the recipe, OR you can make the dough, chill for 2 hours, then shape, cover with plastic wrap that is sprayed with nonstick spray and chill forup to 2 days. Remove the rolls from the refrigerator and let sit at room temperature 30 minutes before baking. Pick the option that works best for you, but don't chill longer than 2 days total.

When we heard that Santa likes to give his reindeer peanut butter treats after a busy night delivering presents, we thought we'd borrow the idea and make this very creamy, peanut butter-based recipe for Reindeer Fudge. Now, we can all enjoy this holiday treat!

Ingredients
  • 1-1/2 cup smooth peanut butter
  • ¾ cup (1-1/2 sticks) butter
  • 4-1/2 cups confectioners' sugar
  • 1-1/2 teaspoon vanilla extract
  • 3 tablespoons milk
Instructions
  1. Coat a 9-inch glass microwave-safe pie plate with cooking spray.
  2. In a large microwave-safe bowl, combine peanut butter and butter. Microwave at 80% power for 1 to 2
  3. minutes. Remove from microwave and add remaining ingredients; mix well and press into pie plate.
  4. Microwave at 80% power for an additional 1 minute.
  5. Place in refrigerator for 1 to 2 hours, or until firm, then remove and cut into eight wedges, wrap, and
  6. decorate.

Ingredients
  • 2 cups mashed sweet potatoes
  • 1 cup sugar
  • 3 eggs, separated
  • ½ teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg (preferably freshly grated)
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 teaspoon fresh lemon juice
  • ½ cup melted butter
  • 1 cup LACTAID® Fat Free Milk
  • 2 (9 inch) prepared pie crusts
Instructions
  1. Preheat oven to 350˚ F.
  2. Puree mashed sweet potatoes, sugar and egg yolks
  3. together in a food processor or blender until smooth.
  4. Pour into a large mixing bowl. Add cinnamon, nutmeg,
  5. salt, vanilla, lemon juice, melted butter and LACTAID®
  6. Fat Free Milk. Mix well. In separate bowl, whip egg
  7. whites using an electric mixer until soft peaks form.
  8. Whisk egg whites into pie filling. Pour filling into
  9. prepared pie crusts.
  10. Bake pies in middle of the oven for 60-70 minutes or
  11. until the center of the pie is lightly firm to the touch.
  12. Cool pies on wire rack.

  • CRUST INGREDIENTS:
  • • 6 Tablespoons buIter,melted
  • • 1½ cups graham cracker crumbs
  • • ¼ cup sugar
  • FILLING INGREDIENTS:
  • • 2 (8-ounce) packages cream cheese,softened
  • • ½ cup sugar
  • • 3 eggs
  • • ½ teaspoon sea salt
  • • 1 (21-ounce) can LUCKY LEAF® Premium Apple Pie Filling
  • • ¾ cup favorite prepared caramel sauce
  • • Coarse crystals sea salt
Instructions
  1. Heat oven to 350°F. Coat 9x9-inch baking pan with nonstick cooking spray.
  2. In a medium bowl, mix melted butter, graham cracker crumbs and sugar until
  3. crumbly. Press firmly into the bottom of the baking pan.
  4. In large bowl, combine cream cheese, sugar, eggs, and salt. Beat at medium
  5. high-speed, until mixture is smooth, about 1 to 2 minutes.
  6. Fold LUCKY LEAF  Premium Apple Pie Filling into cheesecake mixture. Spoon
  7. mixture evenly on top of crust.
  8. Bake uncovered for 45 to 50 minutes, until filling is set. Let cool completely.
  9. Just before serving, drizzle caramel sauce on top of cheesecake pieces and
  10. sprinkle with a little coarse sea salt. Refrigerate leftovers.

French Raisin Apple Pie

Ingredients
  • 1 cup Sun-Maid Natural Raisins
  • ½ cup sugar
  • 2 tablespoons plus ¾ cup all-purpose flour, divided
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 4 cups (4 to 6 medium) peeled, chopped tart apples
  • 1 tablespoon lemon juice
  • 1 9-inch unbaked pie dough round or shell
  • ½ cup packed brown sugar
  • ⅓ cup butter or margarine
Instructions
  1. HEAT oven to 425 F.
  2. COMBINE raisins, sugar, 2 tablespoons flour, cinnamon and salt. Mix with apples and lemon juice. If using pie dough, fit into 9-inch pan according to package directions.
  3. POUR fruit into pie shell.
  4. COMBINE remaining ¾ cup flour, brown sugar and butter just until mixture resembles coarse crumbs. Sprinkle crumbs evenly over raisin-apple mixture.
  5. BAKE on lowest oven rack for 10 minutes. Reduce temperature to 350 F and bake an additional 45 to 55 minutes or until golden brown. Serve warm or cold.
  6. Makes 8 servings.
