The Best Fried Chicken in the South

This recipe calls for hot sauce and if you're like me you can't take spicy food Don't worry the chicken is not spicy at all in fact if you didn't know it you wouldn't know it was in the recipe. The hot sauce does bring some wonderful favors to the chicken.
- 3 eggs
- 1/3 cup water
- 1 cup hot red pepper sauce
- 2 cups all-purpose flour
- 1/3 cup cornmeal
- 2 tsp Baking Powder
- 1 1/2 teaspoon pepper
- salt to taste (I usually use 1 Tbsp)
- 1 tsp Garlic Powder
- 1 to 2 1/2-pound chicken, cut into pieces
- Oil, for frying,
- In a medium-size bowl, beat the eggs with the water. Add hot sauce. In another bowl or gallon size baggie combine the flour, baking powder, pepper, salt, and garlic. Dip the chicken in the egg, and then coat well in the flour mixture.
- Heat the oil to 350 degrees (about 1 inch in a large heavy skillet.
- Fry the chicken in the oil until brown and crisp. Dark meat takes longer than white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.
- Serve
